Modern life is 'plasticized,' conveying enormous benefits to our lives in hygiene, convenience and colour. Plastics are everywhere within the home, in food packaging, cooking utensils, children's toys, building materials and household equipment. Plastics result from the petrochemical industry (non-sustainable and environmentally disastrous) and are environmentally hazardous throughout their lifecycle; starting with their production which involves large-scale pollution, releasing potent chemicals such as dioxins, phthalates and toxic metals into our environment; and affecting human, animal, plant and aquatic life. Plastic is given different qualities through treatment with a cocktail of other terrifying chemicals, all of which can leach out of the individual products and into air (you know that new plastic smell?), water or something in close proximity to the plastic. And then what do we do?

We wrap our food up in it! Most supermarket food is placed on polystyrene trays, packed and smothered in cling film, displayed in glossy punnets, or preserved in tins lined with plastics. Next we eat the food (and possibly the leached plastic chemicals) and chuck the packaging into the bin. From here the plastics stay with us forever, being largely un-biodegradable. Tiny fragments of plastics are accumulating in the Pacific Ocean and wreaking havoc throughout the food chain. If the plastics are burnt, then they release a stream of unpronounceable and highly toxic chemicals into the environment (posing a huge risk to the health of fire-fighters, and possibly proving fatal to occupants of burning buildings who inhale PVC fumes). Plastics are quite literally a problem that will not go away.

They appear to be so useful and hygienic, but can seep dangerous chemicals into the foods which they come into contact with, possibly exacerbated by heat (think oven-safe and microwaveable packaging). Recent studies across America (including the University of Rochester and the National Centre for Environmental Health) have suggested that phthalates (chemicals found in plastics such as Clingfilm, vinyl and plastic bags) can cross the placenta, damaging the sexual development of male children (this is also recognised in other mammals) resulting in physical and possibly behavioural problems. A team of Swedish researchers have linked the household use of plastics to an increase in eczema, asthma and other allergies, and there is concern that the immature bodies of children and babies are at increased risk of toxic damage and build up of plastic chemicals, found in food packaging, toys and drinking bottles. (Several types of plastics have been phased out of use for toys of young children due to their health-risk). Further research has indicated a link between the use of plastics around food and the development of certain cancers such as breast cancer, immune problems, and even infertility.

So what can you do to reduce the amount of plastic in your life?

1) Ditch plastic bags, and always carry cloth bags and baskets; for fairly traded organic cotton bags try http://www.bishopstontrading.co.uk Keep bags in your car, and fold cotton bags up small in your handbag.

2) Chuck out the cling film and use unbleached brown paper and grease-proof paper or recycled aluminium foil to pack sandwiches and store foods in the fridge. Buy unbleached paper bags at http://www.soilassociation.org The paper bags can be reused several times and eventually composted or recycled with your newspapers.

3) Have your vegetables delivered to you to cut down on supermarket packaging; http://www.riverford.co.uk mostly use unbleached paper bags, cardboard punnets and boxes, cutting out a vast amount of packaging and waste. Ask your supermarket to provide unbleached paper bags, or take your own; my local shops are quite used to my strange behaviour by now! Try using local markets, fruit and veg shops or your farmers market and take your own baskets and bags; I get sellers to tip stuff straight into my bag if they do not have paper bags. A further bonus is that less stuff ends up in your bin, and you don't spend an hour unpacking everything.

4) Drink tap water in stead of mineral water, and send kids to school with a drink in a metal sports container rather than plastic bottles. If you can't bear the tap water, then buy the larger 5 litre mineral water bottles, or buy a water filter.

5) Go shabby Chic; spring-clean all of the plastic stuff out of the kitchen and invest in wooden spoons and chopping boards (both of which draw bacteria into the wood and kill it), have some fun choosing ceramic mixing bowls and other kitchen stuff. Look on Ebay for old-fashioned stoneware jelly moulds, and other traditional kitchen things. Don't forget, Christmas is coming, so you can ask for some new things as presents.

6) Sometimes, having children seems to involve surrounding yourself with mountains of multi-coloured plastic, but with some careful buying you can choose safer products for your family and friends, especially for tiny vulnerable new babies. 7) Choose natural fibres in general. 'Fleece' materials may be extremely cheap, but are made of plastic derivatives (some are made of recycled plastic bottles). Synthetic clothes are an environmental nightmare because not only do they release dangerous chemicals during their processing, but they are almost indestructible, do not biodegrade and burn to release noxious chemicals back into the environment. In fact clothing is another area which you may wish to think about. It is worth considering that school clothes are thought to be some of the most chemically toxic items of clothing which you can buy. I know it is expensive, but go for real cotton, wool, linen and other natural fibres where possible.

Cutting down of the amount of plastic in your life will help you to eat more healthily (lots of local fruit and veg), give you a great excuse for a clear-out and a shopping spree, and help you work toward a more sustainable, and healthful lifestyle. There has been so much concern in recent years about the negative impact of 'plastic living' on our health, that there is plenty of choice when looking for alternatives.

The practice of wine tasting is the sensory examination and evaluation of wine, and a tradition as ancient as wine itself. Wine tasting and how you taste wine could just as well be called wine smelling based on the physiology of the process, according to Jordan Ross, enology expert. Mr. Ross would be quick to point out that when it comes to the practice of wine tasting, taste and smell are often confused, and when one talks about the taste of a wine we are referring to sweet, sour, salt, bitter and umami - all picked up by taste receptors on our tongue. But much of what is called taste - spice, cherry, red currant - is actually our sense of smell.

Umami?

Umami is a Japanese word meaning "savory" or "deliciousness", and applies to the sensation of "savoriness", one of the five basic tastes sensed by the human tongue's specialized receptor cells, specifically the detection of natural amino acid, glutamic acid or glutamates. Umami is often described as the overall reaction or feel of the palate to certain foods and beverages, and is associated with the sense of ripeness and developed flavor of some foods including vegetables (such as ripe tomatoes), meats, cheese and other protein-heavy foods. Cells respond to umami taste by secreting the neurotransmitter ATP (adenosine triphosphate; ATP transports chemical energy within cells for metabolism) and serotonin (a neurotransmitter produced in the brain known to influence the functioning of the cardiovascular, renal, immune and gastrointestinal systems) in a mechanism exciting sensory fibers that convey taste signals to the brain. Umami flavor is strongest when combined with aromas. With wine, the adjective applied is "texture".

In the early 1900s, Japanese Professor Kikunae Ikeda first identified umami and believed it to be one of only two senses, the other being sweetness, which is perceived by the palate as pleasant. The significance of umami in food and wine pairing demonstrates why some wines, especially those that are more complex and mature, are naturally better food complements. The more umami a food contains, the more it disturbs the wine's flavor/acidity/fruit balance, and the addition of acidity and salt into the food will correct this imbalance. Once you understand the concept of umami and how it influences the wine tasting experience, you can successfully pair any wine with any food.

Retro-nasal smell

When sniffing a wine, the smells reach the wine taster's olfactory receptors that are one square inch in size, located at the top of the nasal cavity through the nose. But smells also get there by an alternative route - an internal chimney called the "retro-nasal passage" which connects the mouth to the nose. As you swallow, your mouth is closed, forcing you to exhale through your nose. The swallowing process aides the retro-nasal olfaction by carrying the residual wine vapors in the mouth - retro-nasally - to the smell center because of the connection of the mouth to the nose via the retro-nasal passage. The result is you smell, as well as taste, the wine. This is why wine tasters gargle the wine in their mouths.

Smell, emotion and memory are linked and affect the wine tasting experience.

The wine taster processes smell, memory and emotion together in the brain. The primary olfactory cortex receives information about smells from nerves in the nose, and links directly to the amygdala, which controls expression and experience of emotion, and the hippocampus, which controls the consolidation of memories. Memories that are triggered by smell often seem more intense than other memories because they appear to be more emotional than memories triggered by visual or audio stimuli, explaining why smells in a wine can send a tingle down the spine, or transport us back to a long-forgotten childhood memory. The smell sense can recreate significant past episodes in your life!

Why we don't all like the same taste in wine

A common generalization is that people don't like the same foods nor share the same taste in wines. Could it be that different people taste things differently? Experiments have shown that people do taste things differently and that some of these differences are genetic. Smell and taste are regulated by around 1,000 genes, over half of which are totally inactive. A study published in the journal Nature Genetics by Israeli researchers identifies at least 50 of these genes, active in some people and not in others. This may explain why some of us adore some smells and tastes while others are incapable of smelling them. Researchers at Israel's Weizmann Institute say their study shows that each human displays a unique pattern of active and inactive odor-detecting receptors. These receptors determine how our brain interprets flavors and smells in food. To some degree, we each live in our own sensory world.

Wine tasting jargon - why it's difficult to describe what we smell

There is a lot of uncertainty in wine tasting when it comes to naming smells. The nose is good at detection but bad at recognition or naming. Smells are conceptualized, owing to the fact that there are very few terms to describe them. We can describe smells only by analogy. The language of smell does not have a precise or exact descriptive domain unto itself like colors as visual descriptors. Memory plays a major role as a means of aiding our recognition of smells. While we can recognize thousands of different smells in our everyday lives, we cannot normally recall them independently of external stimuli. Smells are virtual symbols in that they act as representations of representations in our minds. Often people are unsure and unable to recognize even a common smell like grapefruit and other familiar odors when they are separated from their sources. Smell memories are individual and personal and subject to an almost infinite set of variable factors relating to conditioning, culture, and contextual experience. These factors, in turn, influence the wine tasting experience.

The original, the granddaddy of all of today's items bought and sold as fruit baskets, was in fact a basket full of assorted fruits. While there is no clear cut evidence when the first fruit basket was wrapped up and delivered to it's overjoyed recipient, it is known that in ancient times fruit baskets were routinely given to kings and feudal lords all over the world as a sign of respect and loyalty.

For whatever occasion applied, the coronation of a new king, a royal birth or even a wedding, the kingdom was carefully searched and only the best of all the fruits available were carefully assembled into a wicker basket and presented to the royal family. It wasn't until sometime later that other products, perhaps spices from far away lands, plants, wines and other products not indigenous to the kingdom, were included with the fruit. That's how it all began. From that point forward, whenever that was, fruit baskets became a name only for any conglomeration of goods, almost always containing some amount of fruit, that were given as gifts and delivered in baskets.

The first items included with the fruit were flowers, wines, nuts and chocolates. For some reason, this selection was viewed as the natural choice to accompany fruit in the basket. As the world slowly became a smaller place and products from one side of the globe began to routinely travel to the other, fruit baskets became more and more diverse. Can you imagine the look on the face of a European King when presented, in the dead of a cold winter, with a basket of fresh fruit from some far away land he'd never seen? It's the same look people have today when their fruit baskets arrive at any time of the year.

One of the popular manifestations of the original fruit basket is the "Fruit of the Month" basket. Shipped in traditional wicker baskets, these pure, fruit-only baskets arrive monthly all year round with the finest fresh fruits grown somewhere on the globe not affected by seasonal weather. Fresh cherries arrive in December, grown in South America. Oranges arrive in New York in January, grown on organic farms in California. Plums and grapes arrive in October. Everybody, everywhere is constantly searching for a way to make the original fruit basket more exciting and new again to capture a share of this huge, growing market.
